Why You’ll Love This Recipe

These tostadas are fun to eat but still simple enough for a regular morning. The crispy corn tostadas give you the crunch right away, so there is no need to fry tortillas from scratch. Smashed avocado with lime adds a creamy, bright layer, while black beans seasoned with cumin make the tostadas more filling. The fried eggs bring warm protein, and the salsa, cheese, cilantro, and optional hot sauce make the toppings taste fresh and lively. Each bite has a little crisp shell, soft avocado, creamy egg yolk, and salty cheese. They are best made right before serving, but the avocado and beans come together quickly enough that the whole breakfast still feels easy. It is also a nice choice when you want something colorful and savory without making a big skillet meal.

What Makes This Recipe Work

The crisp tostada base is what makes this recipe feel different from a regular egg breakfast. Since the tostadas are already crunchy, the job is to keep the toppings balanced and not too wet. Smashed avocado acts like a creamy spread that helps the beans and egg stay in place, and the lime juice keeps the flavor bright. Warming the black beans with cumin gives them more flavor than using them straight from the can. The egg goes on warm, the salsa adds freshness, and the cotija or feta gives the top a salty finish. Adding salsa near the end matters because too much liquid sitting on the tostada can soften the crisp base. The layers are simple, but each one adds a different texture.

Ingredient Notes & Easy Swaps

  • Corn tostada shells: Use already crisp store-bought shells and check that they are certified gluten-free when needed. Keep them dry until every topping is ready; a baked corn tortilla can substitute, but it needs its own cooking time and is not part of this method.

  • Avocado and lime juice: Choose an avocado that yields slightly to gentle pressure. Lime brightens the mash and slows browning; fresh lemon juice works in the same amount but tastes less distinctly Mexican-style.

  • Black beans and cumin: No-salt-added beans keep the sodium estimate more predictable. Rinse and drain thoroughly before warming. Pinto beans work in the same amount; do not add extra liquid because it softens the tostadas.

  • Eggs: Use pasteurized shell eggs if you want soft yolks. Otherwise cook both whites and yolks firm to 160°F. Scrambled eggs can replace fried eggs, but cook them completely and divide one egg per tostada.

  • Salsa: A thick salsa adds flavor with less free liquid than a thin restaurant-style salsa. Drain a watery salsa before measuring. Salsa brands are a major sodium variable.

  • Cotija or feta: Cotija gives the most traditional salty flavor; feta is a workable substitute in the same amount. For dairy-free tostadas, use dairy-free feta or omit the cheese, understanding that protein, fat, and sodium will decrease.

  • Cilantro and hot sauce: Add both at the end. Cilantro can be omitted if disliked; parsley gives freshness but not the same flavor. The nutrition estimate includes 2 teaspoons hot sauce, and hotter or saltier brands will change sodium.

Instructions

  1. 1Equipment: 2 serving plates, a cutting board, a knife, a small bowl, a fork, a small saucepan, a 12-inch nonstick skillet with a lid, a thin spatula, a spoon, a small cup for cracking the eggs one at a time, and an instant-read thermometer. Place 2 tostada shells on each plate but do not top them yet.
  2. 2Halve and pit the avocado on the cutting board. Scoop the flesh into the bowl, add the 2 teaspoons lime juice and 1/16 teaspoon salt, and mash for about 20 seconds, leaving a few small chunks.
  3. 3Add the 1/2 cup rinsed beans and 1/4 teaspoon cumin to the saucepan. Warm over medium-low heat for 2 to 3 minutes, stirring once or twice, until steaming. Remove from the heat and keep covered.
  4. 4While the beans warm, heat the skillet over medium-low. Add the 1 teaspoon olive oil and tilt to coat.
  5. 5Crack the 4 eggs into the small cup one at a time, then slide each into the skillet with space between them. Cover and cook for 3 to 4 minutes, until the whites are fully opaque.
  6. 6For soft yolks, use pasteurized eggs and remove them when the whites are set. For nonpasteurized eggs, keep cooking until the yolks are firm and the eggs reach 160°F. Lift each egg with the spatula.
  7. 7Working quickly, spread one-quarter of the mashed avocado on each tostada. Divide the hot beans among them, then top each with 1 egg, 1 tablespoon salsa, 1/2 tablespoon cheese, and 1/2 tablespoon cilantro.
  8. 8Add up to 1/2 teaspoon hot sauce to each tostada if using, and serve right away while the shells are crisp.

Tips and Tricks

  1. 1

Stage every topping first: Once avocado and salsa touch the shell, the crunch begins to fade. Complete all cutting, warming, and cooking before assembly.

  2. 2

Drain both beans and salsa: Even small amounts of free liquid collect under the egg and weaken the tostada. The toppings should be moist but never spooned on with liquid pooling around them.

  3. 3

Use a wide skillet for four eggs: A 12-inch pan gives the whites room to spread without joining, making it easier to place one intact egg on each shell.

  4. 4

Build from thick to wet: Avocado forms the first barrier, followed by beans and egg; salsa belongs near the top. This order slows moisture from reaching the shell.
