  • 1 tbsp kosher salt, for the pasta water
  • 10 oz whole grain penne
  • 1 lb boneless skinless chicken breast, sliced into thin strips
  • 2 tbsp olive oil, divided
  • 1 red bell pepper, sliced
  • 1 yellow bell pepper, sliced
  • 1 small red onion, sliced
  • 2 tsp chili powder
  • 1 tsp ground cumin
