Why You’ll Love This Recipe

You will love Greek Chicken Orzo Salad because it gives you comfort and balance in the same bowl. The lemon dressing, feta, olives, and oregano give it that bright Greek salad flavor while chicken and orzo make it a full meal. The flavors are familiar enough for a weeknight, but the little details make it feel more special than plain pasta. The cucumber stays crisp, the tomatoes stay juicy, and the orzo holds the dressing without feeling heavy. It is also practical: it tastes good right away and even better after a short chill. The instructions walk you through the heat level, timing, and visual cues, so you are not guessing when the protein is cooked or when the sauce is ready. It is the kind of recipe that helps a beginner feel confident while still giving an experienced cook something satisfying to make.

What Makes This Recipe Work

Greek Chicken Orzo Salad works because the bowl has balance instead of just pasta and sauce. The hearty base (Oregano chicken and orzo) gives the meal real staying power. The texture piece (cucumber, tomatoes, red onion, olives, and parsley) keeps each bite from feeling one-note, whether it adds freshness, color, tenderness, or a little bite. The sauce layer (Lemon juice, olive oil, garlic, salt, and pepper) ties everything together and gives the pasta something flavorful to hold onto. The finish (crumbled feta) adds the bright, salty, creamy, or herby note that makes the dish taste complete. The trick is not rushing the skillet work. Cooking the main ingredients carefully, warming the aromatics, and loosening the sauce with pasta water all build flavor in small layers. Once you understand those little steps, the recipe feels easy instead of fussy, and the final bowl tastes more intentional than the short cook time suggests.

Ingredient Notes & Easy Swaps

  • Dry orzo: Orzo is rice-shaped pasta and cooks in 7 to 9 minutes. Because this is a cold salad, rinsing after draining is correct here even though you would never rinse pasta for a hot sauce.

  • Gluten-free swap: Use 1 1/2 cups gluten-free orzo made from corn and rice. It softens faster, so start tasting at 5 minutes, and rinse it well since gluten-free orzo is stickier and clumps badly once cooled.

  • Dairy-free swap: Replace the 1/2 cup crumbled feta with 1/2 cup dairy-free feta-style crumbles, or leave the cheese out and add 1 tbsp extra chopped olives for saltiness. Dairy-free feta is softer and breaks down more easily, so fold it in with just a few strokes at the very end.

  • Olives and feta drive the sodium: Kalamata olives and feta together contribute most of the salt in this salad. If you are watching sodium, rinse the olives briefly, use 1/3 cup feta instead of 1/2 cup, and cut the added sea salt in the dressing.

  • English cucumber: English cucumber has thin skin and few seeds, so it stays crisp and does not water down the dressing. With a regular cucumber, peel it and scrape out the seedy center before dicing, then blot the pieces dry.

  • Fresh lemon juice: Squeeze the lemon fresh; bottled juice tastes flat and slightly bitter and this dressing has nowhere to hide. Roll the lemon on the counter first to get more juice out of it.

  • Nutrition estimate: Nutrition is an estimate, not a lab measurement. It assumes RiceSelect or similar regular orzo, standard feta and Kalamata olives, and about 10% absorption of the orzo-water salt.

Instructions

  1. 1Equipment: a medium pot, fine-mesh strainer, 12-inch skillet, tongs, paper towels, a cutting board and knife used only for raw chicken, a second board for the vegetables, a small bowl and whisk, a large mixing bowl, an instant-read thermometer, measuring cups, measuring spoons, and serving bowls or storage containers.
  2. 2Pour 2 quarts water into a medium pot and bring it to a rolling boil over high heat. Add 1 tsp kosher salt and 1 1/2 cups dry orzo, stir once, and cook 7 to 9 minutes, stirring occasionally, until tender with a tiny firm bite.
  3. 3Drain the orzo in a fine-mesh strainer, not a colander, since the grains slip through wide holes. Rinse immediately under cool running water for about 30 seconds so the orzo stops cooking and stops clumping, then shake the strainer hard several times and let it drain 2 to 3 minutes. Leftover rinse water is the main reason orzo salads taste diluted.
  4. 4On the raw-chicken board, pat 1 1/4 lb boneless skinless chicken breast, cut into 1-inch cubes, very dry with paper towels. Put it in a bowl and season with 1 tsp dried oregano, 1/2 tsp sea salt, and 1/4 tsp black pepper, tossing until every side is coated. Wash your hands, the board, the knife, and the bowl with hot soapy water before you touch anything else in the kitchen.
  5. 5Heat 1 tbsp of the olive oil in a 12-inch skillet over medium-high heat, about 7 out of 10. When the oil is hot and moves easily around the pan, add the chicken in a single layer with space between the pieces, in two batches if the pan looks crowded.
  6. 6Let the chicken sit without moving 2 minutes so the bottom browns, then stir and cook 4 to 5 minutes more, turning every 1 to 2 minutes. Check the thickest piece with an instant-read thermometer; it must read 165°F. Color alone is not a reliable sign of doneness, so a golden outside or white center does not prove the chicken is safe. Move the cooked chicken to a clean plate or bowl, never back onto the plate or board that held it raw. Let it rest on that clean plate about 5 minutes so it is no longer hot before it meets the cool vegetables and feta.
  7. 7In a small bowl, whisk the remaining 1 tbsp olive oil with 3 tbsp fresh lemon juice, 2 minced garlic cloves, 1/4 tsp sea salt, and 1/4 tsp black pepper until it looks slightly cloudy and combined.
  8. 8In a large bowl, combine the drained orzo, the cooled chicken, 1 diced english cucumber, 1 1/2 cups halved cherry tomatoes, 1/2 small red onion sliced very thin, 1/2 cup halved kalamata olives, and 1/4 cup chopped fresh parsley. Pour the dressing over and toss gently until everything is coated. Scatter 1/2 cup crumbled feta over the top and gently stir it in with two or three light strokes so it stays in visible crumbles. Serve at room temperature or chilled.

Tips and Tricks

  1. 1

Use a Fine-Mesh Strainer, Rinse, and Drain Hard: Orzo grains slide right through a standard colander. Drain in a fine-mesh strainer, rinse 30 seconds under cool water so the grains stop cooking and stay separate, then shake it out thoroughly; trapped water is what makes the lemon dressing taste weak.

  2. 2

Slice the Red Onion Very Thin: Thick onion pieces stay harsh and dominate every other bite, especially after the salad sits. Paper-thin slices soften in the lemon dressing within minutes and spread their sharpness evenly through the bowl.

  3. 3

Let the Chicken Cool Before Tossing: Give the cooked chicken about 5 minutes on the clean plate. Hot chicken wilts the cucumber, softens the tomatoes, and makes the feta smear instead of holding its crumbles.

  4. 4

Fold the Feta In Last: Add the feta after everything else is dressed and use only a few gentle strokes. Stirring it early breaks it into a salty paste that coats the orzo; folding it late keeps distinct briny bites and a better look in the bowl.
