Why You’ll Love This Recipe

You will love Honey Sriracha Chicken Rice Bowls because it gives you honey sriracha chicken, brown rice, and roasted broccoli, green onions, and sesame seeds in a meal that is easy to portion and actually useful later in the week. The flavor comes from honey sriracha soy garlic sauce thickened with cornstarch, so the bowl tastes intentional instead of like plain leftovers. The sauce is the reason it works for meal prep: once thickened, it clings to the chicken instead of pooling at the bottom of the container. The prep is beginner-friendly because the main job is searing chicken and thickening the sauce until glossy, with clear cues for texture, color, and doneness. It is practical, filling, and built for the kind of lunch you are relieved to have waiting in the fridge.

What Makes This Recipe Work

Honey Sriracha Chicken Rice Bowls works because the main parts support each other instead of competing. The honey sriracha chicken gives the meal its filling center, while the brown rice makes each container feel complete and steady. The vegetables bring color, freshness, and texture, especially roasted broccoli, green onions, and sesame seeds. The sauce or seasoning matters too: honey sriracha soy garlic sauce thickened with cornstarch adds the flavor that ties the bowl together, so the meal does not taste like separate ingredients sitting side by side. This is especially important for meal prep because food can taste flatter after chilling. A good bowl needs protein, a sturdy base, vegetables that hold up, and one strong flavor thread. This recipe has all four, which is why it still feels like a real meal after a day or two in the refrigerator.

Ingredient Notes & Easy Swaps

  • Chicken breast: Cut the chicken into even 1-inch cubes so the pieces cook evenly. Chicken thighs can be used for a juicier bowl.

  • Brown rice: Brown rice gives the bowl a sturdy base for meal prep. White rice, jasmine rice, or quinoa can work if you prefer.

  • Broccoli florets: Broccoli roasts best when the florets are similar in size and spread out on the pan. Frozen broccoli can work if thawed and dried well first.

  • Olive oil: Olive oil helps the broccoli roast and the chicken brown. Avocado oil can be used for a more neutral flavor.

  • Honey: Honey makes the sauce sticky, sweet, and glossy. Maple syrup can work, but it will taste a little less classic.

  • Sriracha: Sriracha gives the sauce heat. Use less for a mild bowl, or add more if you want it spicier.

  • Low sodium soy sauce: Soy sauce balances the honey with salty flavor. Low sodium is best so the sauce does not become too salty.

  • Rice vinegar: Rice vinegar cuts through the sweetness and keeps the sauce balanced. Apple cider vinegar can work in a pinch.

  • Garlic and ginger: Fresh garlic and ginger make the sauce taste bold and bright. Stir them into the sauce so they do not burn in the skillet.

  • Cornstarch slurry: Cornstarch mixed with water thickens the sauce so it clings to the chicken. Stir the slurry again right before adding because cornstarch settles quickly.

  • Green onions and sesame seeds: These add freshness and crunch at the end. Add them after reheating so they stay bright.

Description

Honey sriracha chicken, brown rice, roasted broccoli, green onions, and sesame seeds make a sticky-sweet meal prep bowl with a little heat. The sauce thickens around the chicken, the broccoli gets browned edges, and the bowls reheat into a satisfying lunch. Bold, spicy, but balanced.

Ingredients

  • 1.5 lbs boneless skinless chicken breast, cut into 1-inch cubes
  • 1 cup brown rice
  • 2 cups water
  • 4 cups broccoli florets
  • 2 tbsp olive oil, divided
  • 1/3 cup honey
  • 2 tbsp sriracha
  • 3 tbsp low sodium soy sauce
  • 1 tbsp rice vinegar
  • 3 garlic cloves, minced
  • 1 tsp grated fresh ginger
  • 1 tsp cornstarch
  • 1 tbsp water (for slurry)
  • 2 green onions, thinly sliced
  • 1 tsp sesame seeds
Beginner Friendly

Instructions

  1. 1Equipment: a medium pot with a tight-fitting lid, a large rimmed baking sheet, parchment paper, a large nonstick skillet, a small bowl, a second tiny bowl for the slurry, a whisk, a cutting board, a knife, tongs or a spatula, paper towels, measuring cups, measuring spoons, and 4 meal prep containers.
  2. 2In a medium pot with a lid, combine 1 cup brown rice and 2 cups water. Set the burner to high heat until the water starts bubbling, then turn the heat to its lowest setting, cover, and cook for 30 minutes. It is done when the water is absorbed and the rice is tender.
  3. 3While the rice cooks, line a baking sheet with parchment paper and heat the oven to 400°F. Toss 4 cups broccoli florets with 1 tbsp olive oil and 1/4 teaspoon salt right on the sheet. Roast for 15 minutes until the edges are browned and the broccoli is fork tender.
  4. 4In a small bowl, whisk together 1/3 cup honey, 2 tbsp sriracha, 3 tbsp soy sauce, 1 tbsp rice vinegar, 3 minced garlic cloves, and 1 tsp grated ginger. In a separate tiny bowl, stir 1 tsp cornstarch with 1 tbsp water until smooth; this is your thickener.
  5. 5Pat the cubed chicken dry with paper towels. Set a large nonstick skillet on medium-high heat and add 1 tablespoon olive oil. When the oil is hot and moves easily around the pan, add the 1.5 lbs cubed chicken in a single layer. Cook for 4 minutes without stirring, until the bottoms are golden. Use tongs or a spatula to turn the pieces so the pale sides touch the hot skillet, then cook 3 to 4 minutes more, stirring once or twice, until the cubes are golden on the outside, no pink remains in the middle, and the thickest piece reaches 165°F.
  6. 6Lower the heat to medium and pour the honey sriracha sauce over the chicken. Stir for 1 minute, then add the cornstarch slurry and stir for another 1 to 2 minutes until the sauce is glossy and clings to the chicken.
  7. 7Set out 4 meal prep containers. Divide the cooked rice evenly between them (about 3/4 cup each), then add the chicken and the roasted broccoli on top. Sprinkle each with sliced green onion and sesame seeds. Let everything cool for 15 minutes on the counter before sealing the lids and refrigerating.

Tips and Tricks

  1. 1

Start With the Slowest Part: Begin with the base or roasted vegetables before the quick protein step. In Honey Sriracha Chicken Rice Bowls, the timing works best when the part that takes longest is already moving before the skillet gets busy. This keeps you from rushing and helps everything finish close together.

  2. 2

Thicken the Sauce Last: Cook the chicken until golden and no pink remains, then add the honey sriracha sauce and cornstarch slurry. The sauce should turn glossy and cling to the chicken. That shine means it is thick enough for meal prep containers. It should not look watery.

  3. 3

Pack Fresh Parts Separately: Keep fresh toppings, sauces, greens, or crunchy pieces separate from hot food when the recipe includes them, especially if you will reheat the container later. Meal prep fails when steam and sauce soften everything at once. Separating those pieces keeps the final bowl brighter and better textured.

  4. 4

Cool Before Sealing: Let the cooked food sit uncovered for about 15 minutes before snapping on lids. If you seal containers while everything is steaming, moisture collects on the lid and drips back down. That trapped steam can make grains, vegetables, and proteins softer by day two.
