Ingredients

  • 1 lb skin-on salmon fillet, cut into 4 pieces
  • 1 tbsp extra virgin olive oil, for the salmon

  • 2 cans (15 oz each) cannellini beans, drained and rinsed
  • 1 large English cucumber, halved and sliced
  • 1 1/2 cups cherry tomatoes, halved
  • 1/3 small red onion, thinly sliced
  • 1/2 cup pitted Kalamata olives, halved
  • 1/3 cup chopped fresh dill
  • 1/4 cup chopped fresh flat-leaf parsley
  • 4 cups baby arugula
