  • 2 medium zucchini, cut into 3/4-inch half moons

  • 2 tbsp extra virgin olive oil, for roasting
  • 3/4 tsp kosher salt, divided
  • 1/4 tsp black pepper
  • 2 cans (15 oz each) cannellini beans, drained and rinsed
  • 4 cups baby kale or baby spinach
