Why You’ll Love This Recipe

The trick here is blended cottage cheese. Whipped smooth with lime, cumin, chili powder, and smoked paprika, it becomes a thick, tangy taco dressing that tastes like a cross between sour cream and queso, except it carries most of the protein in the bowl. Underneath, black beans and quinoa are tossed in their own spices so they are seasoned in the middle, not just on top, and romaine, cherry tomatoes, corn, and lime-tossed avocado keep everything fresh and cold. It is 22 grams of protein with no meat at all, and unlike most vegetarian taco salads, nobody finishes it wondering where dinner went. It is also a fantastic reason to keep cottage cheese in the fridge.

What Makes This Recipe Work

Blending is the whole game. Cottage cheese whizzed on high for a full minute goes from curdy to completely silky, thick enough to coat romaine like ranch. Splitting the spices between the dressing and the beans means the flavor lives throughout the bowl rather than only on the surface. Cooling the quinoa before it meets the dressing keeps everything creamy instead of thin and broken. And tossing the diced avocado in lime juice does double duty, keeping it green while adding one more layer of acidity that this rich, creamy bowl needs.

Before You Start

Cook the quinoa first and spread it out to cool, since warm grains will thin the dressing. Use low-fat rather than fat-free cottage cheese, which blends smoother and does not taste chalky. Scrape the blender sides at least once and give it the full minute; stopping early leaves visible curds. Drain thawed corn thoroughly. Dice the avocado last of all, straight into a spoonful of lime juice, and keep the romaine chilled until you are ready to serve.

Ingredient Notes & Easy Swaps

  • Cottage cheese: Low-fat blends smoothest and carries most of the protein in this salad. Fat-free can taste chalky and watery. Blend a full 45 to 60 seconds or the dressing will feel grainy.

  • Black beans: A full can, tossed with oil and spices before assembly so the flavor is in the middle of the salad rather than only on the surface.

  • Quinoa: Rinse before cooking and cool completely before dressing. Warm quinoa melts the cottage cheese dressing into a thin puddle.

  • Corn: Thaw and drain frozen corn well, pressing with paper towels if needed. Excess water is the main reason creamy salads go loose.

  • Avocado: Dice it last and toss it with a tablespoon of lime juice, which keeps it green for hours and adds another layer of acidity.

  • Lime juice: Used in both the dressing and on the avocado. Fresh limes only; bottled lime juice has a bitter aftertaste that shows up in a creamy dressing.

  • Cumin and chili powder: Split between the dressing and the beans so the whole bowl tastes seasoned. Smoked paprika adds a background of char without any grilling.

  • Romaine lettuce: Sturdy enough to hold a thick, creamy dressing. Keep it cold and add it at assembly so it stays crisp under the cottage cheese sauce.

Instructions

  1. 1Equipment: a 2-quart saucepan with a tight-fitting lid, a fine-mesh strainer, a blender or food processor, a rimmed plate or small sheet pan, a medium bowl, a cutting board, a chef's knife, measuring cups, measuring spoons, a fork, a spatula, 4 divided meal prep containers, 4 small covered cups for the dressing, and small covered containers or bags for the romaine, the tomato-onion-cilantro mix, and the avocado if your containers do not have separate compartments.
  2. 2Rinse 3/4 cup quinoa well in the fine-mesh strainer and shake off the excess water. Add the quinoa and 1 1/2 cups water to the saucepan. Bring to a full boil over medium-high heat. Stir once, cover tightly, reduce the heat to low, and simmer for 15 minutes, until the water is absorbed and tiny curled tails are visible on the grains.
  3. 3Remove the saucepan from the heat and leave it covered for 5 minutes. Fluff the quinoa gently with a fork, then spread it across the rimmed plate or small sheet pan. Let it cool for about 10 minutes, until no longer steaming.
  4. 4Make the cottage-cheese dressing while the quinoa cooks. Add 2 cups low-fat cottage cheese, 2 tablespoons fresh lime juice, 1/2 teaspoon ground cumin, 1/2 teaspoon chili powder, 1/4 teaspoon smoked paprika, and 1/4 teaspoon kosher salt to the blender or food processor. Blend on high 45 to 60 seconds, stopping once to scrape down the sides, until completely smooth with no visible curds. Divide the dressing among the 4 small covered cups.
  5. 5In the medium bowl, combine the drained and rinsed black beans, 1 1/2 cups corn, 1 tablespoon extra-virgin olive oil, the remaining 1/2 teaspoon ground cumin, the remaining 1/2 teaspoon chili powder, and the remaining 1/4 teaspoon kosher salt. Toss until evenly coated and let stand about 5 minutes.
  6. 6Chop the large head of romaine into about 8 cups. Quarter 1 1/2 cups cherry tomatoes, finely dice 1/3 small red onion, and chop 1/2 cup fresh cilantro.
  7. 7Divide the cooled quinoa and the seasoned black bean and corn mixture among one compartment in each of the 4 containers. Place the romaine by itself in a dry separate compartment or in the small bags. Divide the tomatoes, red onion, and cilantro into a third compartment or the extra small containers so their moisture does not sit against the lettuce during storage. Keep the cottage-cheese dressing cups separate.
  8. 8For the best color and texture, dice the ripe avocado shortly before serving and toss it with the remaining 1 tablespoon fresh lime juice. If preparing it in advance, divide the lime-coated pieces among tightly covered small cups, kept separate from the lettuce.
  9. 9Cover all components and refrigerate promptly. Do not pour the dressing over the salad until serving, and do not reheat any part of this recipe.
  10. 10To serve, combine one portion of quinoa and seasoned beans and corn with one portion of romaine and vegetables. Stir the refrigerated cottage-cheese dressing until smooth, add the lime-coated avocado, pour the dressing over the salad, and toss gently until everything is lightly coated.

Tips and Tricks

  1. 1

Blend Longer Than You Think: A full minute on high is what turns cottage cheese from curdy to silky. Stop early and the dressing feels grainy on the greens.

  2. 2

Season the Beans, Not Just the Dressing: Tossing the beans and corn in oil and spices first means flavor in the middle of the salad, not only on the surface.

  3. 3

Lime the Avocado: A tablespoon of lime juice on the diced avocado keeps it green for hours and adds another layer of brightness.

  4. 4

Cool Quinoa Completely: Warm quinoa melts the cottage cheese dressing into a thin puddle. Ten minutes of cooling keeps everything creamy.
